Potted Citrus Thyme

A fragrant and versatile woody herb, lemon thyme is used in all kinds of Mediterranean dishes. Try mixing in meat, fish, soft cheeses, vegetables, beans and pulses, as well as cakes. There’s no need to waste leftover lemon thyme – pop sprigs into a freezer bag and freeze, and when you want to use them simply shake the bag to separate the leaves from the woody stem.
